Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 3 carrots, diced
- 2 celery stalks, sliced
- 2 potatoes, cubed
- 1 cup brown lentils (rinsed)
- 2 tomatoes, chopped (or canned equivalent)
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp dried thyme
- 1 litre vegetable stock
- 2 cups chopped spinach or kale
- Salt and pepper
- Fresh parsley to serve
Method
- Heat olive oil in a large pot.
- Sauté onion until soft.
- Add carrots, celery and potatoes. Cook 5 minutes.
- Stir in spices and tomatoes.
- Add lentils and stock.
- Bring to a boil, then simmer 30–35 minutes until lentils are tender.
- Stir in greens and cook 5 minutes more.
- Season to taste and garnish with parsley.
